I made this recipe up after eating a chicken gumbo soup and thinking how much I love Cajun cuisine.. I've never actually been to the southern United States, but it's definitely on my to-go list, if nothing else but for the food. This recipe is best eaten out of bowls with some thick buttery slices of turkish bread.

Cooking your salmon on a bbq is really easy using cedar plank and the result is outstanding. The smoke adds another dimension to the flavour. You'd be hard pressed to find a better salmon in a first class restaurant. My marinade / basting sauce is optional but try it once and you'll be making it again and again. My family can't get enough of it!

It's easy to make chili with a good old packet chili seasoning mix, but I reckon there's something pretty satisfying about cooking from real ingredients. Once you've made your chili, there are heaps of primo ways to have it: nachos, tacos, enchiladas etc.. Just be sure to serve it with cheese, sour cream, salsa and guacamole. Leftovers (if you have any) go real well in toasties the next day - yum. Note: this recipe is pretty mild, if you wanna crank up the heat then add more chili!

Cheese muffins are quick and easy to make. I use this basic recipe a lot. You could add some precooked vegetables or fresh herbs, such as parsley or coriander, to the mix as well to make even tastier!
