Awesome carrot cake with pineapple... Yum! Cream cheese icing...Double Yum!
Prep time: 10 minutesIngredients:
1 Cup plain flour
1 Cup wholemeal flour
2 Teaspoons bicarbonate soda
1 Teaspoon salt
2 Teaspoons cinnamon
½ Cup sugar
½ Cup chopped walnuts
2 Cups grated carrots
3 Large eggs
1 Cup canola oil
1 Teaspoon vanilla
225g Crushed pineapple
Topping
2 Small tablespoons butter
3-4 tablespoons of cream cheese
Vanilla essence
1 Cup icing sugar
Directions:
Mix 1st 8 ingredients, then beat eggs, oil, vanilla & pineapple + Juice with a fork and add to dry ingredients. Place in lined cake tin and Fanbake 160oC for 30-45min.
Topping
Cream all together with a beater very well until soft and spread on cool cake
