Who doesn't love a good fish pie on a cold winter night? This recipe is super simple and very tasty.
Prep time: 15 minutesIngredients:
60 gms butter
1 leek
1 carrot
6 mushrooms
6 broccoli florets
60 gm flour
500ml milk
1 tsp mustard
salt & pepper
1 can smoked fish fillets
1/2 cup peas
1/2 cup corn
Directions:
Pre-heat oven to 210,
Defrost pastry if frozen.
Chop the leek, carrot, mushrooms and broccoli however thick you like.
Melt butter and cook the leek on low for 5 mins.
Add the carrot, mushrooms and broc and cook until slightly tender
Add everything else, mix well and cook until the mixture thickens.
Line a greased ovenproof pie dish with pastry
Place a pot on top to stop it rising
Cook 10 mins in oven
Remove from oven and take pot off pastry.
Add filling and top with pastry, sealing the edges.
Brush with milk.
Slit the top to allow steam to escape.
Return to oven and cook 40 mins or as golden brown as you like.

Fab recipe and very easy to follow. I left out the corn. Used smoked trout for the fish. Seconds the next night were even more tasty. Cheers Geoff
