The original recipe came from a very old primary school Home Economics book. I adapted the original recipe by adding the maple syrup and sultanas. These cookies are delicious!! Plus the oats add some good fibre to your treat. Also, if your budget doesn't stretch to maple syrup the recipe still works with maple flavoured syrup (the cheap fake stuff).
Prep time: 20 minutesIngredients:
125g Butter
2T Maple Syrup
1/2 cup Sugar
1/2 cup Sultanas
1/2t baking soda
1 cup Shredded Coconut
1 cup Flour
1 cup Rolled Oats
pinch of salt
Directions:
1. Heat butter, maple syrup, sugar and sultanas in a small pot over a low heat until butter is melted.
2. Remove from heat and add baking soda. Make sure it is combined well.
3. Stir in remaining ingredients. Roll into small balls. I use a table measuring spoon (leveled flat) which keeps all the biscuits a uniform size and is a great sized biscuit. Place on a tray lined with baking paper and flatten with fork.
4. Bake at 180°C for approximately 10 minutes until biscuits are golden brown.
5. Remove from tray once cooked with a fish slice and allow to cool and harden on a rack.
Make sure you watch these biscuits closely as they cook. Mixtures containing maple syrup can burn easily.

For a more kiwi version of this recipe you can replace the maple syrup with 1 tablespoon of Golden Syrup and 1 tablespoon of Water. I tried this out yesterday and the biscuits turned out perfect.
