Cheese muffins are quick and easy to make. I use this basic recipe a lot. You could add some precooked vegetables or fresh herbs, such as parsley or coriander, to the mix as well to make even tastier!
Prep time: 15 minutesIngredients:
1 egg
1 cup milk
50g melted butter
2 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
pinch cayenne pepper
1/2 cup grated cheese
Directions:
Beat egg and milk together. Add butter and mix well.
Combine dry ingredients. Make a well in centre of dry mix and add liquid mix. Combine together quickly but don't over mix.
Pour mixture into greased muffin tins and bake at 200°C for 15 minutes.

As last post said.. great base recipe.absolutely Cheesy deliciousness. Recommend to add some herbs or bacon just to add some flavour. So easy and fast
Amazing base recipe. I added some finely chopped onion, bacon and a small tomato as well as using 1 cup of cheese not 1/2 cup. Also added the tiny bit of fresh parsley I could actually find in my garden as its gone to seed and muffins have come out perfect. Saving this recipe for sure

awesome recipe i added tomatoes in mine with 2 types of cheese and they turned out amazing thanks for that. everyone in my house hold will love it when they return home from work.

Very easy to make and turned out perfect. I have had lots of cheese muffin disasters in the past but these were definetely the best. Nice bite with the cayenne pepper too.
Just whipped up my first batch of these and sampled one straight from the oven - amazing! Will definitely make these again, and probably add my own spin next time, but this is a great base recipe and so easy to make. Highly recommended!

These are yummy! i made a batch for my sons 5th bday party yesterday and they went down a treat, about to go and make them tonight for school/work lunches but im going to try putting chopped tomato and grated onion in them this time :D

Seriously good muffins and so easy and quick to make. Everyone loved them. I added 1 cup tasty cheese rather than half and threw in half cup spring onions yum delish! The cayenne pepper made a wonderful difference to other cheese muffins I've made before. Highly recommend this lovely recipe. Thanks for the recipe Maggie, it's a keeper for my family now!
I love this recipe and find it perfect for using up fresh herbs / garlic butter that I bought for other dishes and don't want to throw away! I live in France, where cheddar is rare as hens' teeth and more expensive too, so I use a mix of any strong, sharpish cheese in my fridge, again avoiding the need to buy ingredients (you can tell I make these muffins on Sunday mornings for breakfast!) To get aa perfect golden muffin, I suggest baking them with top and bottom element on for 12 mins, then switching off the top element but keeping the same temperature for anotheer 5 mins.
Tiarna, it's basic baking and you should leave your butter out until it's room temp and nice and soft. That way it will combine properly.
ummm its not that clear so i dnt kno if i neeed to melt the butter or anything

Can't understand the lady who said they were so greasy!! Perhaps she overgreased the muffin pan, or fried them in oil!! I've been doing a similar recipe for umpteen years but sometimes add buttermilk as the rising agent.
These are great! I cooked them for my family and even the fussies ate them. I also added extra cheese and some finely sliced ham! (I would reccomend not adding ham if you are not going to eat them the same day you cook them) I also added some cheese and pepper on top for a litle extra flavour and great presentation. These muffins will never fail to please anyone!
Fail safe recipe! More cheese (tasty) ,say 1cup, means you get more bang for your cheesey taste buck, and you can leave the salt out. I sometimes use paprika instead of cayenne pepper - works well, too.
This recipe gave excellent result , however, I varied my recipe batch by adding cottage cheese and a bit of mustard to the milk mixture...the mustard brings out the flavour of the cheese....the result were moist and flavour full muffins.......just fantastic.
I just whipped up a double batch of these for the first time. They turned out just beautifully. I added a finely chopped spring onion also. Will be a regular recipe for me. =)

They were so easy to make ! They turned out perfectly ! I'd have to agree with adding a little something to the mix if you're going to eat them by themselves . I added some tabasco sauce . . . gave it a nice kick !

Followed the recipe to the letter. The results were so greasy that if left rings on the plate it was served on. Never ever again.
