- Frittata
This frittata is great way to use last night left overs. Makes a great lunch served with a salad. Delicious cold too, so make ahead of time for a picnic.

The original recipe came from a very old primary school Home Economics book. I adapted the original recipe by adding the maple syrup and sultanas. These cookies are delicious!! Plus the oats add some good fibre to your treat. Also, if your budget doesn't stretch to maple syrup the recipe still works with maple flavoured syrup (the cheap fake stuff).
