Meatloaf

This is my adaption of an Alison Holst recipe. It's simple to make and delicious. It'll feed four people with leftovers for in the sandwiches. Even my 10 month old baby loves this! This recipe doesn't use egg to hold it together (the sausage meat does the job) and isn't fill of breadcrumbs.

Prep time:   10 minutes
Cook time:   45 minutes
Servings:   4 people with leftovers

Ingredients:
500g beef mince
500g sausage meat
1 large onion diced
1 cup corn
1 cup peas
1 packet Maggies oxtail soup mix (dry stuff)
tomato sauce

Directions:
I use good old frozen peas and corn for this recipe but here's a tip...microwave them first so they aren't frozen otherwise you will freeze your hands when it comes time to combine all the ingredients.

Preheat oven to 180°C
Combine all the ingredients except the tomato sauce into a large bowl and use your hands to mush together until well combined.
Place on a oven tray lined with baking paper and shape into a loaf shape.
Bake for 45 minutes. 15 minutes before it's done brush with tomato sauce and then return to oven.

Great served with mashed potatoes. You can adjust the recipe to suit your tastes. Alison had grated carrots in her recipe.
