Moist, but crunchy edged chocolatey goodness! This works equally well with rice flour for all you coeliacs out there!

Prep time:   20 minutes
Cook time:   15 minutes
Servings:   12 pieces

Ingredients:
200g butter
200g good quality plain chocolate
1/3 cup cocoa
1 1/2 cups brown sugar
3 eggs
1 cup flour
1/2 cup chopped nuts (or you can use dates/raisins/coconut/choc chips whatever you like!) (optional)

Directions:
Preheat oven to 180.
Spray baking tin with oil and line with baking paper (shallowish dish required)
Melt together chocolate, butter and cocoa and set aside to cool. (Does not have to be cold)
Beat together butter and eggs until pale and golden.
Fold in choc mixture and flour.
As an optional extra stir through 1/2 cup chopped nuts, pistachios are good.
Spoon into prepared pan and bake for about 15-20 mins or until skewer in centre comes out clean.
Leave to cool, then cut into squares and dust liberally with icing sugar.

Melt in your mouth, crunchy edges, gooey centre, yum!
