Being gluten free means sometimes baking can be a little compromised! (If any one has been able to crack gluten free pastry I would really appreciate the recipe). Anyway this cake is the best. You can ice it or eat it hot with yoghurt and fruit OR cream.
Prep time: 15 minutesIngredients:
2 eggs
3/4 cup sugar
1/4 cup cocoa
1/4 cup oil (I use Canola)
1sp vanilla essence
1/2 cup milk
1 cup plain GF flour ( I use Rice - the texture is good)
1/2 tsp GF baking powder
Directions:
Oven, 180
20cm cake tin, lined with baking paper
You just need one big bowl for this.
Beat the eggs
Add the sugar - beat it well
Add the cocoa - beat it well and add the vanilla and oil - beat it well.
Add half a cup of flour, 1/2 tsp baking powder and 1/4 cup milk. Beat it well.
Add the other half a cup of flour and 1/4 cup milk. Beat it well.
Pour it into the tin and bake for 25 minutes (fan forced) or 30 minutes (normally bake)
Varaitions: add some chocolate bits at the end, this makes it gooey

Really nice outcome with this cake, its moist and tasted fab! I had to cook it for 45 minutes though and this could be because I have an old oven. Thanks for the recipe im definitly adding this one to my collection
