Mmm Feijoas!

Feijoa Loaf

This is the first time I baked a Feijoa cake. It was actually really easy. Note: The original recipe actually suggest 2 cups of Feijoa but found that 1 & 1/2 was plenty. Orginal recipe also suggest 2 cups sugar but found that 1 cup was fine.

Cook time:   1 hour
Servings:   2 loafs

Ingredients:
1 & 1/2 cups Feijoas
1/2 cup oil
1 to 2 cups sugar (depending and taste)
2 eggs
2 Tsp vanilla essence
1 small orange
1 Tsp cinnamon
1 Tsp salt
1 cup bran
1/2 cup raisins or sultanas
2 cups self rsing flour

Directions:
1. Preheat the oven to 180°C.
2. In a large bowl mash up the feijoas with a fork.
3. Mix in oil, sugar, egg, and vanilla
4. Mix in cinnamon, salt, bran, orange and sultanas.
5. Finally sift in flour, mix until combined, but do not over stir.
6. Pour mixture into 2 well buttered loaf tins.
7. Bake for about 1 hr or until a skewer comes out clean.

      I work for an emergency department at our local hospital and baked 2 Loaves for morning tea it was a hit with the doctors and nurses I took your recommendations used raw sugar, wasn't too sure how the orange was going to be used,as the recipe didn't say so I finely chopped the whole orange skin and all. You could taste just a hint of it through loaf. Loaf come out moist and beautiful texture. Definitely a winner will be making again thank you for sharing
