Try this recipe once and you'll be making it again and again!
Prep time: 15 minutesIngredients:
1 cup Feijoas (mashed)
1 ¼ cups White Sugar
75g Butter
2 Eggs
½ cup Milk
1 ts Vanilla Essence
2 cups Plain White Flour
1ts Baking Soda
1 ts Baking Powder
½ ts Salt
Cream Cheese Icing
¼ cup Cream Cheese
2 Tbs Butter
1 cup Icing Sugar
½ ts Lemon Rind (grated)
1 ts Lemon Juice
Directions:
In the food processor combine, feijoas, sugar, butter, eggs, milk and vanilla essence. Process until smooth.
In a separate bowl combine, flour, baking soda, baking powder, and salt. Mix well.
Fold in wet mix.
Transfer in to well greased 20cm cake tin.
Bake 40 minutes at 180°C.
Combine all icing ingedients and mix well.
Spread generously over cake once cool.

I come back to this cake recipe year after year during Feijoa season. Feijoas are my absolute favourite, and between this and feijoa cheesecake, life is bliss ????
This cake was amazing, wet ingredients mixed in my trusty bullet, and folded the dry ingredients and the cake was so super moist, my tamariki were wanting me to make another one. The other thing I liked is it wasnt too sweet. Quick easy and moorish will be a family favorite thats sure.
Super easy and very moreish. Great for kids and oldies that arent too keen on sweet desserts. I cut the sugar and add the equivalent or just a little more of feijoas and it still works out delicious. The best!

This Feijoa cake is HEAVEN, light and delish. Will be bragging about it for days. May have to sneak over to the neigbours feijoa tree to grab some more fruit. You must try it.
Around this time of year the feijoas are ready and so yummy, then there's more and more and MORE...soon there are so many you don't know what to do with them. Here's a tip I got from my mother-in-law for storing your excess feijoas. The idea is to freeze them, but it you simmer them over a low heat for about 30 minutes, when the feijoas freeze they won't turn all brown and nasty looking. You'll then have feijoa cake all year round. Scoop out the feijoas and place in a pot. Add a little water, I use about 1/4 of a cup for about 4 cups of feijoas. Bring to the boil, then turn down the heat immediately. Simmer 30 minutes. Once cool, bag up the feijoas using a measuring cup (so you have just the right amount for this recipe :)

This recipe is AMAZING! I made 15 cupcakes with the mix. The flavour is simply more-ish. The icing is also very, very good. TRY THIS RECIPE!

I use this recipe heaps - the only addition I do is 1/2 -1 tsp of cinnamon - great for work morning teas - it always just disappears!
Im not a big fan of Feijoas but after doing this recipe i found the taste to be very nice the cream cheese icing settled down the flavor of the Feijoa and it was fantastic ! very moreish, flavors fantastic Thanks for the recipe Pete
