Quick and easy chicken fettucini carbonara. A great meal for the family.
Prep time: 10 minutesIngredients:
Oil
4 rashers bacon, chopped
2 chicken breasts, chopped
1 onion, chopped
2 cloves garlic, crushed
400g fresh pasta
1 egg
100 mls fresh cream
Parmesan to taste
Salt and Pepper to taste
Fresh herbs (Parsley, Basil) to taste
Directions:
Put on a pot of water to boil the pasta. Fry bacon in oil until crispy, remove from pan. Fry onion, garlic and chicken in same pan (adding extra oil) as bacon and fry until cooked. In a small bowl combine egg, cream, parmesan, salt, pepper and herbs. When water is boiling, cook pasta until al dente - only a few moments for fresh pasta, then drain and return to the pot it was cooked in. Add all other ingredients (bacon, chicken mixture and egg mixture) and stir well. Serve. Bon Appetite!!

Good easy meal that was tasty. Mine was a bit stodgy so I'd recommend saving some of the cooking water from the pasta to loosen up the sauce. I used about 25g of grated Parmesan but I think 50g could be better (need more salt). Crispy bacon on top.
Really enjoyed eating this. I don't cook at all and event this recipe was simple to follow and didn't take too long to cook. Recommend trying this to other people for a fast easy meal
So easy to prepare and cook, even my husband who cant cook can make this! Taste great too!
