These bran and sultana muffins are great straight from the oven with a little butter or they can make an excellent addition to the lunch boxes. The bran is a great way of getting some more fibre into your diet and the sultanas along with the golden syrup makes them SWEET to EAT! They should be nice and moist too!
Prep time: 10 minutesIngredients:
1 1/4 cups plain white flour (185g)
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
2 1/4 cups bran (125g)
pinch of salt
1 cup milk
3/4 cup sugar
1/4 cup butter (60g)
1 tablespoon golden syrup
1/2 cup sultanas
Directions:
1. Preheat oven to 200°C
2. Shift flour, baking powder, baking soda into a large bowl. Then add in bran with a pinch of salt.
3. In a pot over medium heat warm the milk, sugar, golden syrup, sultanas and butter until butter is completely melted.
4. Add wet mixture to the dry mixture and stir until just combined. (Don't over stir or your muffins won't rise as well as they should).
5. Spoon into greased muffin pans. Bake for approximately 15 minutes, testing with a skewer (push a skewer into the centre of the muffin and if it comes out clean then the muffins are cooked).

these muffins are so quick an easy to make, i add a teaspoon of mixed spice also an a little more butter to make them extra moist.
