A healthy salad for the hot summer months ahead.
Prep time: 20 minutesIngredients:
3 Cups dry Couscous
3 Cups of Boiling Water
Small amount of cholesterol free cooking oil
1/2/ Cup Red and1/2 Cup Green Capsicum
3 Salami Sticks - sliced on a angle
3 Spring Onions- thinly sliced
1/4 cup chopped black olives
1/4 cup chopped sun-dried tomatoes
1/4 cup sliced mushroom (optional)
Marinated Feta Cheese in Oil - to your taste
Directions:
Measure couscous and pour 1 tsp of oil over before adding boiling water. Set aside to cool.
Prepare other ingredients, Add to cooled coucous.
Refridgerate.
This salad does not require a dressing as the oil from the feta adds moisture.
